Needtobreathe

Hello, and good evening!
Are you all enjoying your Thanksgiving break? I have some awesome music for you all!
This is my favorite band EVAH!!!! They are the amazing, the talented, the one and only Needtobreathe! I have seen them in concert twice in the past 3 months, that is how good they are.

I first heard them on K-Love radio station with this spectacular song, Washed by the Water:

Co-op Pictures

Hey :-)
Okay, so this past Thursday was the last co-op until JANUARY! Did I mention that already? 6 weeks. According to one of the people that is 7 weeks too long, and I would have to agree...
Along with the last day, we also took photos.....this is just the "goofy" one that we took, so everybody is at their best! As soon as the others are posted on Facebook I will put them up here.


If you see anybody *cough* Will *cough* attempting to strangle anybody, don't worry. All is well. Way back row is highschoolers, so if you want to see me looking like a freak....you know where to look. And mingled in that row are a few middle schoolers, so if you want to see Delany looking crazy, haha than she is sitting next to me.

Betcha' wish you were there ;-)



And yes, that is a baby being held up in the air.

FREE SONG

Howdy Do!
Have you noticed all of my posts lately are centered around music?
Yeah.
Well that is because for the past *cough* 2+ *cough* weeks I have been really busy and my blog was feeling neglected. So these youtube videos and free music posts are just to let you know I am still alive! I will probably be posting more regularly next week ish, because tomorrow is our last day of co-op *cries* until JANUARY. Ahem. Also, I am taking a little winter break off of school for over a month. Yea!
And now what you have been waiting for!

Third Day released their newest album on November 5, titled Miracle. I am a huge fan of their album Offerings 2, and when I heard about this album (today, lol) I got super excited!

Chocolate Chip Cookie Recipe

Dia duit! How are you today?
I am going to show you all how I make awesome chocolate chip cookies that are both dairy and gluten free! I have noticed that a lot of people recently have begun to develop gluten and dairy allergies, myself having gluten issues. I was planning on bringing a big plate of my favorite chocolate chip cookies to co-op on Thursday, but there are a couple of people there who are gluten and dairy free, so I decided to try to convert a regular cookie recipe! It was really simple, and just took a little bit of trial and error to get them perfect. You can pretty much do this with any recipe :-)
Okay, so the recipe I used had eggs and butter in it. For every egg that the recipe calls for, use 2 tbs. of flax and 6 tbs. of water. I read a lot online about this, and everyone said to use half of what I mentioned, but I found that that just wasn't enough. If your recipe calls for butter, substitute any amount with approx. 3/4 of that amount with applesauce, and approx. 1/4 of that amount with coconut oil. I tried half of each, and the cookies were too runny. If your recipe calls for milk, just trade that for the same amount of water. In most cases I find the equal measurement of water works, but in some cases it is too much. I would suggest starting with half the amount of water, and adding if you need. I substituted wheat flour for oat flour (details below), and you can do this with almost any recipe! You may have to play with the amounts, but most often you can just use equal measurements.
So below is the recipe, with everything already converted for you!

Chocolate Chip Cookie Recipe
Ingredients
1/2 cup applesauce
1/4 cup applesauce
1/2 cup sugar
1/2 cup brown sugar
2 tbs. ground flax seed
6 tbs. water
1/2 tsp. vanilla
3 1/4 cups oat flour
1/2 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp baking powder
3/4 cup chopped walnuts
8 oz. chocolate chips (I used Ghirardelli semi sweet)
Directions
Combine all ingredients. Drop dough on greased cookie sheet, bake at 375 degrees for 10 minutes.

Making Oat Flour
Start out with regular, uncooked, rolled oats. Fill your food processor, and start it. Keep on processing until you have a fairly fine powder. Some pieces will be large, most will be flour. 

On the left we have the oat flour, and the right are the whole oats.

The consistency on the left is perfect.

 I love being the cook, you always get to eat :-)

Thrifty Threads: Calling Fall

I was seriously thinking I would have to wait for my fall till mid-to late November, put I have a a little taste this past couple days! Some seriously bad storms have brought some amazing cool weather to my part of the world, and I'm lovin' it. I actually wore a long-sleeve shirt today and didn't die from the heat, wow. Okay peoples, here is the next thrifty threads!

You could wear the gray dress with another long skirt under it and a tank top, with baggy cargo pants, there are so many options!
