Thrifty Threads: Who says?

Apparently there is this "thing" going around that you can't (shouldn't) wear black and brown together. Um, What? I used to be a firm believer in the black/brown rule, but Delany has slowly changed my mind about that one! Check out this awesome outfit, and tell me what you think :-)

Exotic Ingredients: What is Cacti?

So what is Cacti?
Most of you know it as the plural "Cactus", but did you know you could eat it? 



"Most cacti live in habitats subject to at least some drought. Many live in extremely dry environments, even being found in the Atacama Desert, one of the driest places on earth. Cacti show many adaptations to conserve water. Most species of cacti have lost true leaves, retaining only spines, which are highly modified leaves. As well as defending against herbivores, spines help prevent water loss by reducing air flow close to the cactus and providing some shade. Cactus spines are produced from specialized structures called areoles, a kind of highly reduced branch. Areoles are an identifying feature of cacti. As well as spines, areoles give rise to flowers, which are usually tubular and multi-petaled."

"Edible cactus is also known as nopales (no-PAH-les), nopalitos or cactus pads. This vegetable is popular in Mexico and other Central American countries, parts of Europe, the Middle East, India, North Africa and Australia. Its popularity is increasing in the United States where it can be found at Mexican grocery stores, specialty produce markets and farmer's markets.
Edible cactus is characterized by its fleshy oval leaves (typically called pads or paddles) of the nopal (prickly pear) cactus.
With a soft but crunchy texture that also becomes a bit sticky (not unlike okra) when cooked, edible cactus tastes similar to a slightly tart green bean, asparagus, or green pepper.
Cactus pads contain beta carotene, iron, some B vitamins, and are good sources of both vitamin C and calcium."

"Cacti are members of the plant family Cactaceae, which is found naturally only in the Americas and on nearby islands. They range from southern Canada to southern Argentina and can be found coast to coast in both North America and South America."

Recipe:
Cactus Salad.

Ingredients

  • 1 1/2 pounds fresh or prepared cactus paddles or nopales, needles removed
  • 3/4 cup olive oil
  • 1 1/2 teaspoons salt
  • 4 Italian Roma tomatoes, cored, seeded and cut into 1/4-inch dice
  • 1/2 small red onion, cut into 1/4-inch dice
  • 1 to 2 medium serrano chiles, stemmed, seeded and finely diced
  • 2 bunches cilantro, leaves only, chopped
  • 1/2 cup finely grated Cotija or Anejo cheese
  • 1/2 cup red wine vinegar
  • 1 teaspoon freshly ground black pepper
  • 4 to 6 lettuce leaves
  • avocado, peeled, seeded and sliced for garnish
  • 1/4 cup cracked black pepper garnish, recipe follows

Directions

Preheat grill or broiler. Place cactus paddles in a bowl and toss with 1/4 cup of the olive oil and 1/2 teaspoon of the salt. Grill or broil the paddles until grill marks appear on each side, or they turn dark green with black patches, about 3 to 5 minutes. Set aside to cool to room temperature. Cover and chill 2 to 4 hours or overnight. Cut cactus into 1/2-inch pieces. In a large bowl, combine the cactus, tomatoes,onions, chiles, cilantro and cheese with the remaining 1/2 cup oil, the vinegar, the remaining 1 teaspoon salt and pepper. Toss well. Serve on plates lined with lettuce leaves, and garnish with avocado slices sprinkled with cracked pepper garnish.
  • CRACKED BLACK PEPPER GARNISH
  • 2 tablespoons cracked black pepper
  • 1/2 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon salt
In a small bowl, stir all the ingredients together. Spoon over vegetables or drizzle lightly over dressed salads as a garnish.

Yom Teruah-Day of Trumpets

Beginning tonight is Yom Teruah, or the Day of Trumpets.

"Speak unto the children of Israel, saying, In the seventh month, in the
first day of the month, shall ye have a sabbath, a memorial of
blowing of 
trumpets, an holy convocation."

A memorial, a sabbath, and a time of preparing ones heart for the day that is 10 days following, Yom Kippur   or the Day of Atonement.

Park Day

Picking up our little friends Tessa and Georgia (a.k.a. the twins) three days a week from school is fun. I mean, maybe its just experiencing something new, but I think its just that these girls are so stinkin' awesome. Yeah. So some days after we pick them up we go to the park, here are some photos from last week's park/library day.

We are all avid readers, which means we either walk out of the library with a stack books so tall that we cant see over it, or we go there once a week. Sometimes both. This photo depicts Tessa and Georgia playing on the computers while the rest of us are hunting for books.

Whats new with me?
Well, co-op starts tomorrow (!!!!!) and the twins are spending the night! Also, my three year old mp3 player died this afternoon. It just froze up. I almost cried. That thing was my 12th birthday present, and it was hard living without it for 4 hours. Honestly. After we picked up the girls we went to Radio Shack and I bought a new one, and it is super awesome! We get home and the old "broken" one starts working again. Nice. 
But its okay, I was planning on getting a new one anyway, because that old touch screen was really starting to get to me. Now I have two. Haha, so that was my day! How was yours?

9/11

11 years ago today terrorists hijacked 4 Us airplanes and crashed them into the World Trade Center (destroying it), the Pentagon, and one into a Pennsylvania field.  Throughout the whole ordeal people were holding their breathes and praying to God to deliver there families, but God had a different plan, one that we cannot see, cannot understand, and shouldn't try to understand. Though there were survivors who weren't added to the 3,000 that were killed that day, the thing that lives on the most is the pain in the hearts of the people who lost there families. That is something you never could forget. Pray for the families of those people today, that God would comfort them on the 11 year anniversary of 9/11.

Thrifty Threads: Two Ways

Lovely afternoon (evening?) to you all! Wow, its starting to getting dark our earlier here, and that is the first sign of fall. Another sign? 19 Kids and Counting begins again ! Whoohoo, tuning in tonight at 9. You?
Okay, today's Thrifty Threads is me wearing an outfit that I just put together, and am in love with. Black and pink are my favorite colors, especially when they are together. This outfit is also great because you can wear it two ways. The first way is a great going-to-the-park outfit, and the second....not sure. But its a bit more fancy so you could really wear it anywhere. 
Now I know what you are thinking, "You live in hot and sticky Florida and you wore an outfit like that to the park?". The answer is yes, I actually wore this to the park today. I have always been kind of an over dresser, I think it just has to do with being a girl, but in my eyes no occasion is too small to get dressed up for. If you aren't thinking that, you are probably thinking this outfit is maybe a little weird? Well, maybe just a little bit, but weird is the new awesome! I mean, who says converse, a shirt with rhinestones, and a 60's inspired hairdo don't make a great park-going outfit?
Moving on, here are some pictures!

Night of Joy

I bet you all are dying to now what I did this weekend that I mentioned in a previous post...:-)
Okay, so Thursday daddy drove down here from SC (where he is working), got here in the middle of the night, then on Friday night took us to......

!!!!
Every year Magic Kingdom hosts some of the top christian artist for a live music festival. All of the bands were great, but the one we went to see was....

NEEDTOBREATHE, the best band ever! Wow, were they amazing.

They have four albums out, their first ever was released in 2006


second album The Heat in 2007


third album The Outsiders in 2009


and their newest album The Reckoning was released in 2011


They are definitely a must see live band!
They started out the night with their song Devils been talkin' and in the show included songs like Something Beautiful, Washed by the Water/Lay Em' Down, Girl Named Tennessee,The Reckoning and a never before heard song that they had written a few nights before titled Difference Maker, which was absolutely incredible! A wonderful mix of rock type music infused with a southern twang. Drums, acoustic and electric guitars, banjos, harmonicas, and a lead singer with an amazing voice make the most incredible mix. 

Though I could keep going on and on about them (do you want me to? I will!), there were other bands there to that you will want to hear about....


Chris Tomlin was there, and we got to hear him play Our God live! That was pretty neat. Casting Crowns was there, and that was really neat also.... There were other bands there like Red, Disciple, Royal Tailor, Francesca Battistelli (we caught the end of her), and Brandon Heath.

On our way to the concert it started to rain, but thankfully it didn't last long and we were able to stay dry (maybe a little damp)...

Before the show we got something to eat, and this guy was playing the piano amazingly.

The stage that Needtobreathe played on was right in front of Cinderella's castle.

One of the coolest things about watching Needtobreathe play was, you could tell that they were having a blast. After a year of non-stop touring after The Reckoning was released (they have been touring since 1999) you would think someone would get tired of it, right? Wrong! It was so obvious that they love what they do :-)

Wow again. That was the most amazing night EVER. I had a blast, Delany had a blast, Momma and Daddy both love Needtobreathe now. :-)
